Secret Lost Recipe For Barbecue Fanatics
Barbecue sauces come in many flavors, styles and types. Almost everyone is familiar with the thick, sweet sauces on the shelves of grocery stores through out the world. However there is so much more to barbecue sauce than meets the pallet.
From thin, vinegar sauces to thick, tomato sauces to mustard based sauces there is a type of sauce for every kind of barbecue and for every kind of barbecue lover.
But there comes a time in everyones life that we have to try something, How do they say it these days….”Try something outside the box.” A new and different kind of barbecue sauce!
Carolina barbecue sauce recipe.” is a vinegar and mustard based sauce and has a lot of bite to it and often is used with beef or fish & vegetables.
Ketchup or tomato and molasses based sauces of the middle and southwest are sauces that are usually sweet and tangy. These are used primarily with grilled or smoked pork or chicken.
Most sauces in America are named by reagin ie; Memphis, St. Louis, Kansas City etc.
St. Louis Barbecue Sauce is thinner and has more of a tangy flavor than its Kansas City sauce and they all claim to have something special…. and it’s true…They do!
I’m not saying anything is wrong with these sauces, but quite the contrary. They are all great and some of my favorites. Which brings me back to my initial point of this article.
I’m about to tell a secret that has been kept for generations by my folks in Hawaii. You’re not gonna believe how simple it is to have the best barbecue sauce you’ll ever taste guaranteed!
Because my people are kickback kinda folks we really don’t put much store in reinventing the wheel and that goes for barbecue sauce as well… You see, we figured out that we could enjoy all of the known barbecue sauce flavors that exist while greatly enhancing them with a touch of Hawaii.
I am passing this secret on to you. All I ask is that if and when you bottle and market it that I get a small percentage. And the name Makena ends up somewhere on the label.
OK! Are You Ready, here’s the secret. Take any store bought barbecue sauce or make your own, it doesn’t matter cause it will all come out the same. Take 1/2 pound of strawberry guavas (grown primarily in Hawaii). Cook them down in water as if you were going to make jelly.
Place your sauce in a sauce pan. Heat and slowly introduce your reduced guava to the sauce. Remember this, if you ad the strawberry guava too fast, your sauce will curdle and take on a kinda nasty bitterness especially with the vinegar and mustard based sauces
Stir in slow and simmer on low heat for about 1 hr. This is important! let sauce cool naturally. Do not cool in refrigerator or with ice as some barbecuers do. In fact for best results apply the sauce when it is at about medium heat. I don’t know why, but it sure does work. Make sure you cook your baked barbecue chicken, veggies or fruit properly. No sauce can cover up bad cooking!
