How to Make a “Simply Perfect Vanilla Cake” and Mini Vanilla Cupcakes
We love cakes! Whether for special occasions such as weddings, showers, birthdays, or other special times, we turn to cake. Church socials, coffee klatches, office treats, down to just simple family meals, we turn to cake. There are so many fancy cake recipes to choose from but sometimes we just want a good old fashioned vanilla cake. Whether you want a simple cake or cupcakes, these recipes are for you. These recipes are also the perfect base for you to play around with to come up with your own “fancier” cakes. You can choose a fancy frosting, a plain frosting, or top your cake with fresh fruit or ice cream; the choice is yours. But whatever you choose, enjoy this simple cake. The “Mini’s” are great for childrens parties where you don’t want too much sweets but the children expect cake. You can use a dab of frosting to anchor an M&M or colorful jelly bean rather than load the cake down with rich frosting.
SIMPLY PERFECT VANILLA CAKE
1 cup unsalted butter, softened
1 1/2 cups sugar
1 tbsp baking powder
1/2 tsp salt
4 large eggs
1 cup milk
2 tsp vanilla extract
2 2/3 cups all-purpose flour
Preheat oven to 350 degrees. Coat two 8-inch round cake pans with nonstick cooking spray. Line the bottoms with waxed paper and spray the paper; set aside.
In a large mixer bowl, with electric mixer on high speed, beat the butter, sugar, baking powder, and salt for 1 minute or until well blended. Add the eggs, beat another two minutes or until fluffy. Reduce the speed to low and beat in the milk and vanilla (batter may look curdled but that is okay) then beat in the flour just until blended. Divide the batter evenly between the two prepared pans. Spread batter out evenly and tap on counter to rid any air bubbles.
Bake at 350 degrees for 30 to 35 minutes until a wooden toothpick inserted in center comes out clean. Cool the cakes, in the pans, on a wire rack for 10 minutes before attempting to remove. Run a small knife around the edge of the cakes to release them. Invert the cakes onto the wire rack, remove the waxed papers and cool completely. Frost with your favorite frosting.
MINI VANILLA CUPCAKES
1/2 cup butter, softened
3/4 cup sugar
1 1/2 tsp baking powder
1/4 tsp salt
2 large eggs
1 tsp vanilla
1/2 cup milk
1 1/3 cup all-purpose flour
Heat oven to 350 degrees. Line mini-muffin pans with paper liners, set aside. (Recipe makes 48 mini cupcakes but can be baked in shifts.)
In a large mixing bowl, using an electric mixer, beat together the butter, sugar, baking powder, and salt for one minute. Add the eggs, one at a time, beating after each addition. Mix the vanilla with the milk. Beat the flour into the mixture alternately with the milk/vanilla mixture. Beat just until blended. Drop one tablespoon of batter into each prepared mini-muffin tin.
Bake at 350 degrees for 15 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in pan on a wire rack approximately 5 minutes before removing from pan to wire rack to cool completely.
Frost with your favorite icing.
