Creamy pumpkin tart (like a Pumpkin Pie)
Having never visited the USA or Canada, I can’t tell you a story about Thanksgiving. I’ve seen Planes, Trains and Automobiles and know how important it was for Steve Martin to get home to his family for this holiday but figured that probably wasn’t enough material to write the Thanksgiving post!
So I did a bit of research and found conflicting stories about how and where the tradition began. Whether you believe in giving thanks to God, the end of the harvest, the formation of your country or the homecoming of an explorer, the modern celebration seems to centre round family, friends and food. While we may not fully understand the history, we can definitely relate to that in the Southern Hemisphere.
In addition to Steve Martin and John Candy (RIP), I also think of pumpkin pie when someone mentions Thanksgiving – although having not had enough experience making or eating this dessert, I thought I had better not mess with a classic. I have however made and eaten a lot of baked cheesecake so I thought I would combine the two. What resulted was a rich and decadent dessert which although we demolished at work would be perfect to share with 12 of your loved ones.
Ingredients: (makes a tart for an approximately 20cm tin although you can use a larger tin and double the recipe)
For the base
1 packet of digestive biscuits (250g)
120g butter, softened
For the topping
400 – 500g baked pumpkin (bake in the oven with a little oil until soft)
250g cream cheese, softened
1 large egg
½ cup light brown sugar
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ginger
¼ tsp rock salt
Method
1. Line the base of a cake tin (preferably loose bottom but not necessary) with baking paper. Grease the sides of the tin with butter.
2. Process the biscuits and butter in a food processor and press into the cake tin. Refrigerate the base.
3. Preheat your oven to 160ºC on Bake.
4. Process the baked pumpkin, cream cheese, egg, sugar, cinnamon, nutmeg, ginger and rock salt in the food processor until smooth.
5. Pour the cream cheese mixture over the refrigerated base. Bake cheesecake in the oven for 30 minutes or until the cream cheese mixture is firm (tap the top lightly).
I covered the cheese cake in a peanut caramel sauce. To make this, add ½ cup sugar and ½ cup water in a sauce pan. Cook over a low heat until the sugar syrup colours a caramel brown and thickens. Add peanuts and pour the syrup over the cheesecake once both are cool.

I need some help baking a pumpkin pie…?

Any experienced bakers out there? Because I have a couple of questions. (I’m sort of new to this stuff xD)
I was thinking that I’d prefer to use fresh pumpkin as opposed to canned. Does canned pumpkin come in a puree? Because I need the pumpkin to work with the recipe I chose soo…
-What type of pumpkin is best for this kind of pumpkin pie?
-How should I prepare the fresh pumpkin? Like how much pumpkin do I need to use so it would be equivalent to a 15 ounce can of pumpkin..AND do I cut the pumpkin up in chunks or puree it or..? (And how should I go about pureeing it because I have NO. IDEA.) I want it to work with the recipe

How do we know if the pumpkin is tender haha..
Using canned pummpkin is just fine. All it is is cooked and pureed fresh pumpkin. No adatives if that is what you are worried about the canning process is what preservees it.
Any way if you still have your mind set on using real pumpkin then start with sugar pumpkins. You can buy them in pretty much any grocery store right now.
Cut in 1/2 and scoop the guts out. Roast until good and tender. Revove skin and process in food processor or blender.
Or cut into 1-2 inch pieces and boil until tender. Remove skin and process.
***Test with a fork if it goes in easily then it is tender if you have to “force it at all then it is NOT tender.

Has anyone tried natural pumpkin from a can for dog diahrea ?
I was told this tip on yahoo yesterday about natural pumpkin from a can ( not the pie filling ) that can be given to my dog to help cure her diahrea. It’s supposed to work really well. I just want to know if anyone else has tried this before I go out and buy a can – my dog ate lots of cat food by accident 
, she’s fine though and not acting sick ay all, just has runny poop – she’s drinking lots of water too Thanks guys !
Good she’s drinking water so she won’t become dehydrated and, yes, pumpkin is prescribed to help with the diarrhea (despite what someone has said the vet. told them).
